Woohoo for Way-Ins!


Well it is official, I have seen Aiden roll over. Hooray! I set him down on his stomach yesterday and within five seconds he had rolled over onto his back. I still don't think that it is something he is going to do on a regular basis because he seems to be fine with spinning around on his back and he is already doing motions that look like he is trying to crawl. It is more of an army crawl at the moment but I am sure that before I know it I will have to baby proof this whole house.
This is going to be a crazy next few weeks, my mom is going to Texas, my brother is going to camp, my Dad is going to Georgia and then we are all converging in Vegas. I am excited to see all the family in Vegas, they get to meet Aiden for the first time! I am also hoping that in the next couple weeks Dave makes his way to California, so that our family is once again complete. :) Good thing he has been working out, he is going to need big muscles to lift our growing baby boy!
 
 (Shortly after posting this he rolled over again, I think the kid just likes to keep me guessing.)

4-Months Old

I feel like I am constantly writing about the quick passage of time since little Aiden entered my life. Has it really been 4 months since that little bundle of cuteness entered the world? Technically, it was Sunday when he turned four months old but since it was Father's Day I decided to save mentioning it till his Weigh-In day. Unfortunately, with this marker brings the reminder that he is due for his shots, an experience I am not looking forward to at all. He is gaining weight and growing so quickly that I am sure that I am going to have to start feeding him solids before you know it. I wanted to wait till he was six months old but if he keeps this up, I doubt that either of us will make it that marker!
Life has been pretty good overall in California, Aiden and I have adjusted pretty well but it has been hard not having his Daddy around. We are hoping that he will join us in the next couple weeks. Aiden rolled over once a few days ago, but since I didn't witness it I am not going to count it! I know, it is horrible, but he has not done it since so maybe it was just a fluke. Or he could have just wanted to get it in before his 4-month marker came, I swear that kid already knows how to work things. Hopefully, I will be able to post Friday, I have been cooking up a storm here just haven't had the time to blog about it yet!

Weigh-Ins

Blogging has become a lot more difficult since I no longer have a laptop. I miss that hunk of machinery so much! I am determined to keep up with Aiden's Weigh-In Wednesdays, even though it means comandeering a computer to input his latest stats.
Although Aiden rolled over the day he was born, he hasn't really seemed to interested in that milestone since. I think it is probably because he isn't a huge fan of being on his stomach, but he rolls onto his side all the time. The only time that he really tries to roll over is when he is on the changing table or in his seat, I think he wants his first "official" roll to be some amazing spectacle. Apparently just rolling over on the floor would not be impressive enough for my little man(although I would be impressed.) He has the strength and ability to roll, I swear that he just chooses not to. Sometimes I feel like he is just playing with me, psyching me out with his 3/4 of a roll. I almost think that he might skip rolling all together and go right to crawling!

Caramel Apple Pie

Now the name may be slightly misleading since the pie is not filled with a true caramel but the preparation is pretty darn close. My mom had a whole bag of apples that she did not know what to do with. She told me to do something with them before they went bad. I've been thinking about trying to bake a different kind of apple pie for quite awhile, so I decided that this was the perfect opportunity. Usually I don't mess with my apple pie recipe because I love the way it turns out, but every once in awhile you just like to mix things up. I am so glad that I did! It got thumbs up from all my family members, which is saying something because they do not always agree on dessert. We had it with a scoop of good quality vanilla ice-cream and it was like heaven on a plate! I highly recommend you try this recipe, or (if you live near by or know me personally) ask me to make it for you. It is definitely being added to my permanent recipe collection, and it takes a lot for something to make it in that lock box!


Caramel Apple Pie
Double 9inch pie crust (either homemade or storebought, you just have to have enough to cover the top and bottom of the pie)
1/2 cup unsalted butter
3 tablespoons all-purpose flour
1/4 cup water
1/2 cup sugar
1/2 cup packed light brown sugar
1/2 teaspoon cinnamon
6-8 Granny Smith apples(depending on size) - peeled, cored and sliced in thin equal slices

Preheat oven to 425 degrees F (220 degrees C).
Place the bottom crust in your pan.
Fill with apples, tossed in the cinnamon. 
Cover with a lattice work crust. Set aside.
Melt the butter in a saucepan.
Stir in flour to form a paste.
Add water, white sugar and brown sugar, and bring to a boil.
Reduce temperature and let simmer.
Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off, make sure to hit as much of the top of the crust as possible because it really elevates the flavor and look of the top crust.
Bake 15 minutes at 425 F. Reduce the temperature to 350 F and continue baking for 35 to 45 minutes, until apples are soft.

Is It June Already?

I cannot believe that 2012 is nearly half over, where does the time go? The days are starting to all blur together, having a kid is like living in a whirlwind. I feel like someone has pushed fast forward on the remote and it got stuck. Having little Aiden has opened my eyes to so many things, including how loud life in general is. Every sound in my house I feel is amplified when Aiden is asleep, I cannot believe how noisy closing doors are! It has allowed me to really relish the quiet moments, when everything is still and quiet. I have a fresh appreciation for things that I never realized that I took for granted.
Although I am enjoying the quiet moments, there is nothing quite like hearing the joyful laugh of your little one. It has become my new favorite noise, and will probably continue to be so(at least till he says "Mommy" for the first time)!
